Prepare Crust
- Preheat your oven to 350°F (175°C) and combine almond flour, Orgain Organic Vanilla Protein Powder, Lakanto Monkfruit Sweetener, and melted coconut oil.
- Mix until you have a crumbly, sand-like texture.
Form Crust
- Lightly grease a 13 x 9 inch baking pan and press the crust mixture evenly across the bottom.
Bake Crust
- Bake for 10-12 minutes until lightly golden and then cool slightly.
Prepare Filling
- In a medium mixing bowl, add the reduced-fat cream cheese, Greek yogurt, sweetener, lemon zest, lemon juice, vanilla, and protein powder. Blend until smooth.
Assemble Bars
- Pour the filling over the cooled crust and spread evenly.
Bake Filling
- Bake for an additional 15-18 minutes until the edges are set but the center has a slight jiggle.
Chill and Serve
- Allow the bars to cool completely, then refrigerate for at least 2 hours before cutting into squares.
