Method
 

Prepare Crust
  1. Preheat your oven to 350°F (175°C) and combine almond flour, Orgain Organic Vanilla Protein Powder, Lakanto Monkfruit Sweetener, and melted coconut oil.
  2. Mix until you have a crumbly, sand-like texture.
Form Crust
  1. Lightly grease a 13 x 9 inch baking pan and press the crust mixture evenly across the bottom.
Bake Crust
  1. Bake for 10-12 minutes until lightly golden and then cool slightly.
Prepare Filling
  1. In a medium mixing bowl, add the reduced-fat cream cheese, Greek yogurt, sweetener, lemon zest, lemon juice, vanilla, and protein powder. Blend until smooth.
Assemble Bars
  1. Pour the filling over the cooled crust and spread evenly.
Bake Filling
  1. Bake for an additional 15-18 minutes until the edges are set but the center has a slight jiggle.
Chill and Serve
  1. Allow the bars to cool completely, then refrigerate for at least 2 hours before cutting into squares.
