  3. In the same skillet with bacon fat, crack the large eggs and fry to your liking, about 2-3 minutes for sunny-side up, or scrambled.
  4. For the hollandaise sauce, whisk together egg yolks, Dijon mustard, white wine vinegar, and lemon juice over simmering water for 5 minutes until pale and thick. Gradually whisk in melted butter and season with cayenne and garlic powder.
  5. To assemble, layer crispy hash browns on a plate, add cooked eggs, and top with cheddar and mozzarella cheeses. Pour warm gravy over the top.
  6. Drizzle hollandaise sauce over the dish, sprinkle with crumbled bacon, and garnish with fresh herbs if desired. Serve immediately.
