- Preheat your oven to 400°F. Soak the dried lasagna noodles in a large bowl of hot water for about 20 minutes.
- In a medium bowl, combine ricotta cheese with half of the grated Parmesan, parsley, and a pinch of salt and pepper. Mix until smooth.
- Heat olive oil in a large skillet over medium-high heat. Add chopped onion and saute for 3-4 minutes until translucent. Add ground turkey and season with salt and pepper, cooking for 6-8 minutes until browned.
- Spread a thin layer of marinara sauce at the bottom of a 9x13-inch baking dish. Lay five soaked lasagna noodles on top.
- Add half of the ricotta mixture over the noodles, then a third of the cooked turkey mixture, and a handful of mozzarella.
- Repeat layering with five more noodles, remaining ricotta mixture, another third of turkey, and mozzarella. Top with remaining noodles, marinara sauce, and remaining mozzarella and Parmesan.
- Bake uncovered for about 30 minutes until cheese is bubbly and golden brown.
- Let the lasagna cool for about 15 minutes before slicing and serving warm.
