  • 2 cups chicken stock vegetable stock for vegetarian option
  • 3 tablespoons red curry paste Mae Ploy or Thai Kitchen recommended
  • 1 tablespoon tomato paste
  • 1 inch fresh ginger grated
  • 2 cloves garlic minced
  • 2 tablespoons canola oil substitute with vegetable oil if necessary
  • 1 tablespoon fish sauce soy sauce as alternative
For the Noodles
  • 4 packets instant ramen noodles discard flavor packets
For the Protein
  • 1 pound ground pork tofu or shrimp as substitutes
For the Finishing Touches
  • 4 soft boiled eggs poached eggs can work as an alternative
  • 1/4 cup fresh cilantro for garnish
  • 1/4 cup green onions chives as substitute
  • 2 teaspoons toasted sesame oil
  • 2 tablespoons toasted sesame seeds
  • 1 each Fresno chili optional for heat

Method
 

Cooking Instructions
  1. Cook the noodles by boiling instant ramen noodles for 2-3 minutes, then drain and rinse.
  2. Sauté shallots in canola oil for about 3 minutes until tender and translucent.
  3. Add red curry paste, tomato paste, minced garlic, and grated ginger; cook for 2 minutes.
  4. Pour in coconut milk and chicken stock, bring to a boil, then simmer for 8-10 minutes.
  5. In a skillet, cook ground pork with garlic and Fresno chili until browned, add fish sauce, salt, and pepper.
  6. Assemble by placing noodles in bowls, adding broth, ground pork, soft boiled eggs, cilantro, green onions, and sesame seeds.
