Step‑by‑Step Instructions for Magic Lemon Cobbler
- Preheat your oven to 350°F (175°C) and melt 1/2 cup of unsalted butter in a 9x9-inch baking dish in the oven for 5–7 minutes.
- Whisk together 1 cup of all-purpose flour, 1 tablespoon of baking powder, 1/4 teaspoon of salt, and 1 cup of granulated sugar in a mixing bowl until well combined.
- Add 1 cup of buttermilk and 1 teaspoon of vanilla extract, stirring until smooth. Optionally, mix in 1/2 teaspoon lemon extract if using.
- Pour the batter over the melted butter in the baking dish without stirring. Spoon the lemon filling or lemon curd on top, do not mix.
- Bake in the preheated oven for 45–55 minutes until edges are golden brown and a toothpick comes out clean with moist crumbs.
- Let cool for 10-15 minutes before cutting into squares. Serve warm, optionally with whipped cream or vanilla ice cream.
