  1. Preheat your oven to 350°F (175°C) and melt 1/2 cup of unsalted butter in a 9x9-inch baking dish in the oven for 5–7 minutes.
  2. Whisk together 1 cup of all-purpose flour, 1 tablespoon of baking powder, 1/4 teaspoon of salt, and 1 cup of granulated sugar in a mixing bowl until well combined.
  3. Add 1 cup of buttermilk and 1 teaspoon of vanilla extract, stirring until smooth. Optionally, mix in 1/2 teaspoon lemon extract if using.
  4. Pour the batter over the melted butter in the baking dish without stirring. Spoon the lemon filling or lemon curd on top, do not mix.
