Ingredients

  • 2 cups all-purpose flour sifted for lighter texture
  • 1/4 cup sesame oil can replace with neutral oil for allergies
  • 1/4 cup honey floral preferred or use maple syrup for vegan
  • 1/4 cup ginger freshly grated for flavor
  • 1/4 cup rice wine can substitute with apple cider or omit

For the Syrup
  • 1/2 cup honey reinforces sweet flavor
  • 1/2 cup water to ensure syrup consistency
  • 2 tablespoons ginger freshly grated for aromatic profile

Method
 

Dough Preparation
  1. Combine 2 cups of sifted all-purpose flour, 1/4 cup of sesame oil, 1/4 cup of honey, and 1/4 cup of rice wine in a bowl. Mix until dough forms and knead for 5-7 minutes until smooth.
  2. Cover the dough with a clean cloth and let it rest for 30 minutes at room temperature.
Syrup Preparation
  1. In a saucepan, combine 1/2 cup of honey, 1/2 cup of water, and 2 tablespoons of ginger. Bring to a boil, then simmer for 10 minutes until thickened.
  2. Remove from heat and let cool to room temperature.
Shaping Cookies
  1. After resting, turn out the dough on a floured surface. Divide into portions and shape into 1/2 inch thick forms.
  2. Place shaped cookies on a baking sheet lined with parchment paper.
Frying
  1. Heat oil to 350°F (175°C) and fry cookies in batches for 3-4 minutes per side until golden brown.
  2. Drain on paper towels.
Soaking in Syrup
  1. Place warm cookies in a bowl and pour syrup over them. Allow to soak for 2-3 hours or overnight for richer flavor.
Serving
  1. Arrange cookies on a platter and serve warm or at room temperature.
