For the Cheesecake Filling
  • 8 oz Cream Cheese Can substitute with mascarpone or ricotta.
  • 1/3 cup Sugar
  • 1 tsp Vanilla Extract
For the Strawberry Jam
  • 2 cups Fresh Strawberries Use ripe strawberries for best flavor.
  • 1/2 cup Sugar
For the Cookie Dough
  • 2 1/4 cups All-Purpose Flour
  • 1 tsp Baking Powder
  • 1/2 tsp Baking Soda
  • 1/4 tsp Salt
  • 1 cup Unsalted Butter Softened.
  • 1 large Egg
For Garnishing

Method
 

Preparation
  1. Prepare the cheesecake filling by beating cream cheese, sugar, and vanilla extract until smooth. Freeze small discs of filling for at least 30 minutes.
  2. Make strawberry jam by simmering diced strawberries and sugar, stirring frequently until thickened.
  3. Prepare cookie dough by whisking flour, baking powder, baking soda, and salt. Cream butter and sugar, then add egg and vanilla. Gradually mix in dry ingredients to form dough.
  4. Preheat oven to 350°F (175°C). Assemble cookies by flattening dough, adding jam and cheesecake filling, and shaping into discs.
  5. Bake cookies for 11-12 minutes until lightly golden. Allow to cool slightly before dusting with powdered sugar.
