Preparation
- Prepare the cheesecake filling by beating cream cheese, sugar, and vanilla extract until smooth. Freeze small discs of filling for at least 30 minutes.
- Make strawberry jam by simmering diced strawberries and sugar, stirring frequently until thickened.
- Prepare cookie dough by whisking flour, baking powder, baking soda, and salt. Cream butter and sugar, then add egg and vanilla. Gradually mix in dry ingredients to form dough.
- Preheat oven to 350°F (175°C). Assemble cookies by flattening dough, adding jam and cheesecake filling, and shaping into discs.
- Bake cookies for 11-12 minutes until lightly golden. Allow to cool slightly before dusting with powdered sugar.
