Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Sift together flour, baking soda, baking powder, and salt in a mixing bowl.
  3. Cream butter with granulated sugar and brown sugar until light and fluffy, about 3-5 minutes.
  4. Add eggs, peppermint extract, and vanilla extract to the butter-sugar mixture and blend until smooth.
  5. Gradually mix dry ingredients into the wet mixture until just combined.
  6. Cover and refrigerate the dough for at least 30 minutes.
  7. Scoop dough into balls, roll in granulated sugar, then coat in green sanding sugar.
  8. Place on baking sheets and bake for 9-11 minutes until edges are set.
  9. Press a chocolate kiss into the center of each cookie immediately after baking.
  10. Cool on baking sheets for at least 15 minutes before transferring to a wire rack.
