Ingredients
  

For the Skillet
  • 1 tablespoon Olive Oil can substitute with avocado oil
  • 1 medium Diced Onion yellow or white onion recommended
  • 1 pound Lean Ground Beef can substitute with ground turkey or chicken
  • 1 tablespoon Chili Powder adjust for preferred heat level
  • 1 teaspoon Ground Cumin coriander can be a substitute
  • to taste Kosher Salt and Ground Black Pepper adjust to personal preference
  • 3 cloves Grated Garlic fresh garlic preferred
  • 2 cups Peeled and Diced Sweet Potatoes can substitute with regular potatoes
  • 1 can Fire Roasted Diced Tomatoes or use regular diced tomatoes
  • 1 can Canned Diced Green Chiles can substitute with jalapeños
  • 1/2 cup Water
For Topping
  • 1 cup Shredded Cheddar Cheese can substitute with Monterey Jack
  • to taste Cilantro optional garnish

Method
 

Cooking Instructions
  1. Heat the skillet by drizzling olive oil into a large skillet and warm it over medium-high heat until shimmering.
  2. Brown the ground beef and diced onion in the hot skillet for 5-7 minutes until the beef is browned and the onion is translucent.
  3. Season the mixture with grated garlic, chili powder, ground cumin, kosher salt, and black pepper. Cook for an additional minute.
  4. Transfer the beef mixture to a plate and set aside, wiping out the skillet.
  5. In the same skillet, add sweet potatoes, fire-roasted diced tomatoes, canned green chiles, and water. Stir well, cover and simmer for 20 minutes or until fork-tender.
  6. Combine the beef mixture back into the skillet and top with shredded cheddar cheese. Cover and let melt for 2-3 minutes.
  7. Garnish with fresh cilantro before serving.
