- Heat the skillet by drizzling olive oil into a large skillet and warm it over medium-high heat until shimmering.
- Brown the ground beef and diced onion in the hot skillet for 5-7 minutes until the beef is browned and the onion is translucent.
- Season the mixture with grated garlic, chili powder, ground cumin, kosher salt, and black pepper. Cook for an additional minute.
- Transfer the beef mixture to a plate and set aside, wiping out the skillet.
- In the same skillet, add sweet potatoes, fire-roasted diced tomatoes, canned green chiles, and water. Stir well, cover and simmer for 20 minutes or until fork-tender.
- Combine the beef mixture back into the skillet and top with shredded cheddar cheese. Cover and let melt for 2-3 minutes.
- Garnish with fresh cilantro before serving.
