Step‑by‑Step Instructions for Turkey Pot Pie
  1. Preheat your oven to 400°F (200°C) and prepare egg wash by whisking together the egg with a tablespoon of water.
  2. In a saucepan, melt butter over medium heat. Add chopped onion and sauté until tender, about 5 minutes.
  3. Sprinkle all-purpose flour in with seasonings, stirring continuously for 2 minutes until bubbly and golden.
  4. Pour in chicken broth and milk/cream, whisking continuously until the mixture boils, then simmer for 1 minute.
  5. Fold in cooked chopped turkey, frozen vegetables, and potato if using. Stir until well combined.
  6. Roll out one pie crust into a pie plate, add the turkey mixture, then cover with the second pie crust and seal edges.
  7. Bake on a baking sheet for 35-40 minutes until the crust is golden-brown. Tent with foil if over-browning occurs.
  8. Let cool for 10-15 minutes before serving.
