Method
 

Preparation
  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, mix together shredded mozzarella, cheddar, and grated Parmesan cheese.
  3. Add Italian seasoning and garlic powder to the cheese mixture. Optionally toss in red pepper flakes.
  4. Cut pepperoni slices in half for even cooking and better cheese distribution.
  5. Spread halved pepperoni slices in a single layer on the baking sheet, leaving space between each slice.
  6. Sprinkle the cheese mixture generously over each piece of pepperoni.
  7. Bake for 8-10 minutes until the cheese is melted, bubbly, and golden brown.
  8. Cool the crisps on the baking sheet for a few minutes before transferring them to a platter.
  9. Garnish with chopped parsley if desired and serve immediately, optionally with marinara sauce.
  10. Store any leftovers in an airtight container at room temperature for up to 3 days.
