  • 8 oz Mushrooms Cremini or any variety available
  • 2 cloves Garlic Minced; fresh is ideal
  • 8 oz Swiss Cheese Can be swapped for mozzarella or cheddar
  • 4 oz Goat Cheese Can substitute with feta or cream cheese
  • 2 scallions Scallions Chopped
  • 1 tsp Table Salt Adjust to taste

Method
 

Cooking Steps
  1. Preheat the oven to 375°F (190°C) and grease an 8x8 inch baking dish.
  2. In a high-sided pan, heat over medium-high heat and add the ground beef with a pinch of salt, cooking until browned.
  3. Add the sliced mushrooms and minced garlic to the pan, stirring well and cooking for another 6 to 8 minutes.
  4. Transfer the cooked beef mixture into the greased baking dish, stirring in the goat cheese and two-thirds of the Swiss cheese.
  5. Sprinkle the chopped scallions over the mixture and top with the remaining Swiss cheese.
  6. Bake uncovered for about 15 minutes until hot and the cheese is golden brown.
  7. Let the casserole cool for about 5 minutes before serving.
