Step-by-Step Instructions
  1. Preheat oven to 400°F (204°C) and line a casserole dish with aluminum foil.
  2. Spread thinly sliced shallots and 4 whole garlic cloves in the dish, then sprinkle with thyme and rosemary.
  3. Drizzle olive oil on chicken and coat thoroughly. Season with sea salt and black pepper, then place skin-side up in the dish.
  4. Pour chicken broth and white wine around the chicken without washing off the seasoning.
  5. Roast uncovered for about 1 hour until skin is golden brown and internal temperature is 165°F (74°C).
  6. Broil for 5-7 minutes for extra crispiness, watching closely to prevent burning.
  7. Let chicken rest for a few minutes before serving, drizzled with pan juices.
