  • 2 large Chicken breasts boneless and skinless

  • 1/2 cup Kalamata olives pitted and halved
  • 3 cloves Garlic fresh and minced
  • 1/2 cup Sun-dried tomatoes chopped variety
  • 1 teaspoon Dried oregano
  • 1 teaspoon Dried basil
  • 1 teaspoon Dried thyme
  • 1 tablespoon Lemon juice for brightness
For the Finishing Touches
  • 1/2 cup Feta cheese crumbled, optional
  • 1/4 cup Fresh parsley for garnish

Method
 

Step-by-Step Instructions
  1. Prepare the ingredients by washing and chopping the vegetables and chicken. Cut chicken into bite-sized pieces and prepare the veggies.
  2. Heat the pan over medium-high heat and add the olive oil; let it shimmer for 1-2 minutes.
  3. Add the chicken to the hot oil and sear for 5-7 minutes until golden and cooked through.
  4. Sauté the sliced onion and minced garlic in the same skillet for 1-2 minutes until translucent.
  5. Add zucchini and bell pepper, and stir-fry for 3-5 minutes until slightly softened.
  6. Mix in cherry tomatoes, olives, and sun-dried tomatoes; cook for another 2-3 minutes.
  7. Combine the chicken back into the skillet and season with salt and pepper, tossing for 1-2 minutes.
  8. Finish by adding lemon juice and feta cheese just before serving, garnishing with parsley.
