- In a medium jar or bowl, combine rolled oats, chia seeds, and salt. Mix well.
- Pour in espresso, plant-based milk, maple syrup, and vanilla extract. Stir until blended.
- Mix in plant-based yogurt until fully incorporated and smooth.
- Cover and refrigerate for at least 4 hours, ideally overnight.
- For sweet coffee cream, mix instant coffee, sugar, and hot water in a bowl until frothy.
- Once set, stir the oats and top with sweet coffee cream. Add any desired toppings.
