Step-by-Step Instructions for Santa Fe Chicken Salad
  1. Season the chicken breasts with taco seasoning, salt, and pepper. Let sit for 1 hour.
  2. Preheat the grill to medium heat. Cook the chicken for approximately 8 minutes on each side until 165°F internal temperature.
  3. Grill the corn for about 10 minutes, turning frequently until blackened, then cut the kernels off the cob.
  4. Preheat the oven to 400°F. Slice tortillas into strips, toss with olive oil and salt, and bake for 5 minutes until crispy.
  5. In a large bowl, mix together lettuce, sliced chicken, green onions, cherry tomatoes, black beans, roasted corn, avocado, cheese, and tortilla strips.
