Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and grease a mini muffin tin.
  2. In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and a pinch of salt.
  3. In another bowl, whisk together the buttermilk, egg, vanilla extract, and melted butter until smooth.
  4. Gradually pour the wet mixture into the bowl with the dry ingredients and mix gently until moistened.
  5. Fill each muffin cup about three-quarters full with batter and add any optional mix-ins.
  6. Bake for 12-15 minutes until golden brown and a toothpick comes out clean.
