Step-by-Step Instructions
  1. Heat 2 tablespoons of extra-virgin olive oil in a large skillet over medium heat until it shimmers.
  2. Add the diced yellow onion and halved cherry tomatoes; sauté for about 7-8 minutes until onions are soft and translucent.
  3. Stir in dry penne pasta, marinara sauce, water, garlic powder, dried oregano, kosher salt, and cracked black pepper. Bring to simmer.
  4. Cover and let it cook for 10-12 minutes until the pasta is al dente, stirring occasionally.
  5. Remove the lid, mix in the heavy cream, fresh baby spinach, and shredded mozzarella cheese; stir for about 2 minutes until combined.
  6. Garnish with chopped basil and optional grated Parmesan cheese. Serve warm.
