For the Lasagna
  • 9 sheets Lasagna Noodles whole wheat or gluten-free options available
  • 2 tablespoons Olive Oil
  • 1 medium Onion diced
  • 2 cloves Garlic minced
  • 8 ounces Mushrooms (sliced) any variety
  • 1 teaspoon Dried Thyme or fresh thyme
  • to taste Salt and Pepper
  • 10 ounces Spinach fresh or drained frozen
For the Cheese Mixture
  • 15 ounces Ricotta Cheese or cottage cheese
  • 1 cup Mozzarella Cheese shredded
  • 1/2 cup Parmesan Cheese
For the Sauce
  • 2 cups Marinara Sauce homemade or store-bought

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C).
  2. Grease a 9x13-inch baking dish with olive oil.
  3. Cook the lasagna noodles in salted water until al dente, about 8-10 minutes. Drain and set aside.
  4. In a large skillet, heat olive oil and sauté onions until translucent, about 3-4 minutes. Add minced garlic and cook for another minute.
  5. Add sliced mushrooms, thyme, salt, and pepper to the skillet. Cook until tender, about 5-7 minutes.
  6. Stir in spinach and cook until wilted, about 2-3 minutes. Remove from heat and mix in ricotta cheese.
  7. Spread marinara sauce on the bottom of the baking dish. Layer with noodles, half of the ricotta mixture, and a sprinkle of mozzarella and Parmesan.
  8. Repeat layers with remaining ingredients, ending with sauce and cheese on top.
  9. Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 10-15 minutes until golden brown.
  10. Let lasagna cool for about 10 minutes before slicing and serving.
