- In a large bowl, combine oats, almond milk, chia seeds, protein powder, lemon juice, lemon zest, and maple syrup. Stir thoroughly until creamy.
- Cover the bowl tightly and refrigerate for at least 1 hour or ideally overnight.
- In a microwave-safe bowl, melt white chocolate chips in 30-second increments. Mix in softened cream cheese and Greek yogurt until creamy.
- Spoon the chocolate cream cheese mixture over the oats and spread evenly. Return to the fridge for another hour.
- Serve topped with crushed graham crackers, shredded coconut, or additional lemon wedges.
