  • 1 pound Boneless Skinless Chicken Breasts Cut into small pieces
  • 1 tablespoon Olive Oil
  • 1 teaspoon Smoked Paprika
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder
  • to taste Salt

For the Honey Sauce
  • 1/4 cup Honey
  • 2-3 tablespoons Hot Sauce Adjust according to heat preference
For the Jalapeño Cream Sauce
  • 1 cup Sour Cream
  • 2 Fresh Jalapeños Chopped, seeds omitted for milder flavor
  • 1 tablespoon Lime Juice
For the Quesadillas
  • 4 Flour Tortillas Or corn tortillas for gluten-free
  • 1 cup Shredded Cheddar Cheese
  • 1 cup Shredded Monterey Jack Cheese
  • 2 tablespoons Butter Or cooking spray for a healthier option
  • 1/4 cup Fresh Cilantro For garnish, optional

Method
 

Preparation
  1. Heat a skillet over medium-high heat and add a drizzle of olive oil. Once hot, add the chicken pieces seasoned with spices. Sauté for 8-10 minutes until golden brown and cooked through.
  2. In a mixing bowl, combine honey and hot sauce, mixing well. Pour this mixture over the chicken and simmer for an additional 2-3 minutes.
  3. In a separate bowl, combine sour cream, jalapeños, lime juice, and garlic powder. Mix until creamy and refrigerate.
  4. Lay a tortilla flat, sprinkle cheese on half, add the honey-glazed chicken, top with more cheese, fold, and press to seal. Repeat with remaining tortillas.
  5. Melt butter in the same skillet, cook the quesadillas for 2-3 minutes on each side until crispy and golden.
  6. Remove from skillet, let sit for a minute, then cut into wedges. Drizzle with jalapeño cream sauce and garnish with cilantro.
