- In a large mixing bowl, combine flour, sugar, yeast, and salt. In a separate bowl, mix warm milk, melted butter, and beaten egg. Pour wet ingredients into dry ingredients, stirring until dough begins to form.
- Transfer the dough to a lightly floured surface and knead for about 5-7 minutes until smooth and elastic.
- Lightly grease a bowl and place the dough inside, turning to coat. Cover and let rise in a warm area for about 1 hour until doubled in size.
- Wash and chop strawberries, pat dry. Combine with cinnamon and sugar in a medium bowl.
- Punch down the dough and transfer to a floured surface. Roll out into a rectangle and spread the strawberry filling evenly over.
- Starting from one edge, tightly roll the dough into a log and slice into 12 equal pieces.
- Place rolls in a greased baking dish, cover, and let rise for another 30 minutes.
- Preheat the oven to 350°F (175°C) and bake for about 25 minutes until golden brown.
- Allow to cool for 10 minutes, then prepare icing by mixing icing sugar with milk and optional strawberry extract. Drizzle over warm rolls.
