Step‑by‑Step Instructions
  1. Prepare the pie crust by chilling butter and mixing it with flour until it resembles coarse crumbs.
  2. Peel and cube fresh peaches into 1-inch pieces and toss with lemon juice.
  3. Combine cubed peaches with sugar, tapioca starch, vanilla, and smoked paprika; let sit for 10 minutes.
  4. Preheat the oven to 400°F (200°C) and prepare the pie dish.
  5. Roll out the pie crust and transfer it to the pie dish; pour the peach filling into it.
  6. Create a lattice top with the second disc of dough, weaving strips over the filling.
  7. Brush the lattice with an egg wash and sprinkle with sugar and butter cubes.
