- In a large mixing bowl, whisk together mayonnaise, red wine vinegar, garlic powder, oregano, salt, and pepper until smooth.
- Add the shredded lettuce, sliced red onion, and banana peppers to the bowl, gently folding until coated.
- Take your sub rolls and layer salami, pepperoni, and turkey evenly, then add provolone cheese.
- Preheat your oven's broiler to high. Broil the sandwiches for 2–3 minutes until cheese melts.
- Remove and add tomato slices on top, seasoning with salt and pepper.
- Spoon the salad mixture onto each sandwich and sprinkle with grated Parmesan cheese.
- Close the sandwiches, cut in half, and serve immediately.
