Preparation Steps
- Preheat your oven to 350°F (175°C) and prepare a pie dish with nonstick spray.
- Combine vanilla wafer crumbs, brown sugar, and melted butter in a bowl, then press into the pie dish.
- Bake crust for 10 minutes until golden brown; let cool.
- In a bowl, whip mascarpone cheese and confectioner’s sugar until smooth.
- Add vanilla extract, ground cinnamon, and lemon zest; mix gently.
- In another bowl, whip heavy cream to stiff peaks.
- Fold whipped cream into the mascarpone mixture, then fold in mini chocolate chips.
- Spread filling into cooled crust and top with remaining chocolate chips.
- Cover with plastic wrap and refrigerate for at least 4 hours.
- Slice and serve chilled, optionally garnishing with cocoa powder.
