  • 1 medium Onion can substitute with shallots or green onions
  • 1 packet Taco Seasoning use your favorite or homemade mix
  • 1 cup Prepared Salsa any non-thick salsa or diced tomatoes with spices
  • 1 can Black Beans drained; pinto or kidney beans are good substitutes
  • 1 cup Sweet Corn can use frozen corn
  • 1 can Diced Tomatoes and Green Chiles for milder version, use regular diced tomatoes
  • 2 cups Ready Rice white, brown, or cauliflower rice for a lower-carb option
For the Topping
  • 1 cup Colby Jack Cheese shredded from a block for best melting; can substitute with Monterey Jack or Cheddar

Method
 

Step-by-Step Instructions
  1. Heat a large oven-safe skillet over medium heat. Spray with cooking oil and gather your ingredients.
  2. Add the ground beef and diced onion to the skillet. Cook for 8-10 minutes until browned and onions are translucent.
  3. Stir in the taco seasoning and salsa. Let simmer for 2-3 minutes to blend flavors.
  4. Add black beans, sweet corn, and diced tomatoes and green chiles. Stir and simmer for 5-6 minutes until thickened.
  5. Fold in the cooked rice and stir gently for 2 minutes until heated through.
  6. Sprinkle shredded cheese on top, reduce heat to low, and cover for 2-3 minutes until cheese starts to melt.
  7. Broil under preheated oven for 1 minute until cheese is bubbly and golden. Let cool before serving.
