Ingredients

For the Custard
  • 6 large Egg Yolks Provides richness and creaminess; substitute with additional whole eggs for a less rich flavor.
  • 2 large Whole Eggs Helps the custard set and adds structure.
  • 3/4 cup White Sugar Coconut sugar can be a healthier alternative.
  • 1/4 cup Cornstarch Acts as a thickening agent; can be substituted with arrowroot powder.
  • 1/4 teaspoon Salt Enhances flavor of sweet ingredients.
  • 2 cups Whole Milk Contributes creaminess; substitute with almond milk for a lighter version.
  • 1 cup Heavy Cream Adds richness; swap with full-fat coconut cream for a dairy-free option.
  • 8 oz Dark Chocolate Use high-quality chocolate for best results.
For the Tart Base
  • 1 1/4 cups All-Purpose Flour Gluten-free flour blends can be used.
  • 1/2 cup Icing Sugar Can be replaced with powdered erythritol for a sugar-free version.
  • 1/4 cup Cocoa Powder Dutch-processed cocoa can be used for a deeper flavor.
  • 1/2 cup Butter Adds richness; vegan butter can be a substitute.
  • 1 teaspoon Vanilla Extract Use pure vanilla for better quality.
For the Finishing Touch
  • 2 tablespoons Jam (for brushing on top) Apricot or raspberry jam are good choices.

Equipment

  • Mixing bowl
  • Saucepan
  • Tart Pan
  • Whisk
  • spatula

Method

Prepare the Tart Base
  1. In a mixing bowl, combine all-purpose flour, icing sugar, cocoa powder, and a pinch of salt. Melt the butter and mix it with the vanilla extract before combining into the dry ingredients. Use your hands or a spatula to form a dough. Press the dough evenly into a tart pan, covering the base and sides, and chill in the refrigerator for about 30 minutes to firm up.
Make the Chocolate Custard
  1. In a large bowl, whisk together the egg yolks, whole eggs, and white sugar until the mixture becomes pale and creamy. Meanwhile, in a saucepan, heat the whole milk and heavy cream over medium heat until it is warm. Gradually whisk the warm milk mixture into the egg mixture to avoid cooking the eggs and then stir in the cornstarch and salt until smooth.
Incorporate the Dark Chocolate
  1. Melt the dark chocolate in a microwave or using a double boiler, stirring until smooth. Allow it to cool slightly before folding it into the custard mixture gently.
Bake the Flan
  1. Preheat your oven to 325°F (160°C). Pour the chocolate custard into the chilled tart shell, filling it almost to the top. Bake for about 30-35 minutes until the custard is just set but still slightly jiggly in the center.
Cool and Chill
  1. Remove the flan from the oven and allow it to cool at room temperature for about an hour. Cover and refrigerate for a minimum of 2 hours or overnight if possible.
