Cooking Steps
  1. Pat the chicken thighs dry with paper towels and let come to room temperature.
  2. Heat oil in a skillet over medium-high heat. Place chicken thighs skin-side down and cook for 5-7 minutes until golden brown.
  3. Flip chicken thighs and cook for another 7 minutes until internal temperature reaches 165°F. Remove chicken and leave about 2 tablespoons of fat in the skillet.
  4. Sauté minced garlic in the rendered fat for 30-60 seconds until fragrant.
  5. Mix honey, soy sauce, and rice vinegar in a bowl, then pour it into the skillet with the garlic. Simmer until the sauce thickens.
  6. Return chicken to the skillet, spooning sauce over it and let simmer for 1 more minute. Serve hot.
