Cook the Soup
  1. In a large pot over medium-high heat, add the ground beef, diced onion, and minced garlic. Cook for about 5-7 minutes, stirring occasionally, until the beef is browned and the onion is translucent.
  2. While the beef is cooking, peel and chop Yukon Gold potatoes into little ½-inch pieces.
  3. Once the ground beef is ready, return the pot to medium heat and add the chopped potatoes, beef broth, condensed tomato soup, and petite diced tomatoes.
  4. Bring the mixture to a boil, then cover the pot and reduce the heat to medium-low. Let the soup simmer for at least 30 minutes.
  5. After 30 minutes of simmering, taste your Hamburger Soup and add salt or pepper as needed to enhance the flavors.
