Cook the Soup
- In a large pot over medium-high heat, add the ground beef, diced onion, and minced garlic. Cook for about 5-7 minutes, stirring occasionally, until the beef is browned and the onion is translucent.
- While the beef is cooking, peel and chop Yukon Gold potatoes into little ½-inch pieces.
- Once the ground beef is ready, return the pot to medium heat and add the chopped potatoes, beef broth, condensed tomato soup, and petite diced tomatoes.
- Bring the mixture to a boil, then cover the pot and reduce the heat to medium-low. Let the soup simmer for at least 30 minutes.
- After 30 minutes of simmering, taste your Hamburger Soup and add salt or pepper as needed to enhance the flavors.
