  • 1 cup Shredded Colby Jack Cheese Cheddar or Monterey Jack can be substituted.

Step‑by‑Step Instructions
  1. Preheat your oven to 425°F (220°C) and gather your ingredients.
  2. Cut the corn tortillas into triangles or strips and set aside.
  3. Heat olive oil in a large skillet. Sauté diced onions for 2-3 minutes until softened. Add ground beef, seasoning with salt, pepper, chili powder, cumin, and garlic powder. Cook for 5-7 minutes until browned.
  4. Stir in black beans, frozen corn, chopped cilantro, and red enchilada sauce. Mix until well combined.
  5. Fold in the tortilla pieces and let everything simmer for another minute.
  6. Sprinkle shredded cheese over the mixture in the skillet.
  7. Transfer the skillet to the oven and bake for 10-15 minutes until cheese is bubbly and golden brown.
  8. Remove from oven, cool slightly, and serve with desired garnishes.
