Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C). Slice off the top of the garlic bulb to expose the cloves, drizzle with olive oil, and wrap it tightly in aluminum foil. Place the foil packet in the oven and roast for 30-35 minutes until the garlic is soft and caramelized.
  2. While the garlic roasts, heat a tablespoon of olive oil in a large skillet over medium heat. Add chopped fresh spinach and sauté for 2-3 minutes until the leaves are wilted and vibrant green. Season with salt and pepper.
  3. In a mixing bowl, carefully squeeze out the roasted garlic cloves, mashing them into a paste. Stir in ricotta cheese, half of the shredded mozzarella, dried oregano, salt, and pepper. Mix until smooth.
  4. Spread the garlic-ricotta mixture evenly over your pre-made pizza crust. Layer the sautéed spinach on top, followed by the remaining mozzarella and crumbled feta cheese. Sprinkle optional red pepper flakes over the top.
  5. Preheat your oven to 475°F (245°C). Place the assembled pizza directly on the oven rack or on a pizza stone. Bake for 15-20 minutes or until the crust is golden brown and the cheeses are bubbly.
  6. Remove the pizza from the oven and let it cool for a few moments before slicing. Garnish with fresh basil leaves.
