Preparation Steps
- Peel, pit, and dice two ripe mangoes. Blend in a food processor for 60 seconds until smooth.
- Sprinkle gelatin or agar agar over 1/4 cup of cold water. Let sit for 30-45 seconds.
- Mix bloomed gelatin/agar with 1/4 cup sugar and 1 cup coconut milk in a bowl. Whisk until combined.
- Transfer mixture to a saucepan and warm over medium-low heat for 4-5 minutes without boiling.
