Marination and Preparation
- Marinate the steak by mixing olive oil, minced garlic, lemon juice, dried oregano, thyme, salt, and pepper. Coat the sirloin and refrigerate for at least 30 minutes.
- Prepare tzatziki sauce by combining Greek yogurt, grated cucumber, lemon juice, minced garlic, salt, and dried oregano. Chill in the fridge.
- Whisk together honey, olive oil, lemon juice, and dried oregano for the vinaigrette. Set aside.
Cooking and Assembly
- Heat a skillet over medium-high heat and sear the marinated sirloin steak for 4-5 minutes on each side. Let it rest for 5 minutes.
- Assemble the bowl with a base of cooked grains, topped with sliced steak, cherry tomatoes, cucumber, red onion, olives, and optional toppings. Drizzle with tzatziki and vinaigrette.
