Step-by-Step Instructions
- Begin by bringing 1½ cups of filtered water to a rapid boil in a medium saucepan over medium-high heat.
- Once boiling, add a cinnamon stick, 3-4 slightly crushed whole cardamom pods, a few slices of fresh ginger, and 2-3 whole cloves. Reduce heat to low and let the mixture simmer gently for 5 minutes.
- Remove the saucepan from heat and add 1-2 tablespoons of black tea leaves (or 1-2 tea bags). Cover and let it steep for 3-5 minutes.
- Carefully pour in 1 cup of coconut milk to the steeped tea mixture and return the saucepan to low heat.
- Stir gently to combine the flavors and let it simmer for an additional 2-3 minutes.
- If desired, add coconut sugar to taste, starting with 1-2 teaspoons, and stir until dissolved.
- Turn off the heat and strain the chai into your favorite mugs.
- For an optional finishing touch, sprinkle with ground cinnamon or add a star anise pod. Serve hot or over ice for a refreshing version.
