  2. Allow roasted sweet potatoes to cool for 10 minutes, then peel and mash until smooth.
  3. Sprinkle in flour gradually into the mash and knead until it forms a soft dough.
  4. Roll dough into a ball, cut into four pieces, and shape into squares about 1 inch each.
  5. Roll each square between palms to form pillow shapes and create ridges with a fork.
  6. Boil a large pot of salted water, gently add gnocchi, and cook for 2-3 minutes until they rise to the surface.
  7. Optional: Sauté cooked gnocchi in olive oil or butter for extra flavor until golden brown.
