  • 0.25 teaspoon Garlic Powder Optional
For the Cheese
  • 1 cup Shredded Cheese Cheddar or Mozzarella; alternatives like feta or pepper jack are great too
For the Veggie Mix
  • 1 cup Diced Vegetables Spinach, Bell Peppers, or Mushrooms

Method
 

Instructions
  1. Preheat your oven to 325°F (160°C).
  2. Spray muffin tin generously with cooking spray or brush with oil.
  3. Whisk together eggs, cottage cheese, salt, black pepper, and garlic powder in a mixing bowl until smooth.
  4. Fold in shredded cheese and diced vegetables until evenly distributed.
  5. Fill each muffin tin cup about ¾ full with the egg mixture.
  6. Bake for 20-25 minutes, or until edges are set and tops have puffed slightly.
  7. Let cool for about 5 minutes before removing from the tin and serving warm.
