  1. Begin by cooking and mashing the potatoes until they are smooth and lump-free, allowing them to cool completely.
  2. In a large mixing bowl, combine the cooled mashed potatoes with melted butter and a beaten egg, blending until smooth.
  3. Add the rice flour, corn starch, baking powder, and salt to the potato mixture and stir gently until smooth.
  4. Wrap the dough tightly in plastic wrap and refrigerate for 30 minutes. Preheat your oven to 450°F during this time.
  5. Divide the chilled dough into 8 equal pieces, roll into balls, and flatten to form round flatbreads.
