  • 1 lb Ground Beef or thinly sliced ribeye/sirloin
  • 1 medium Onion diced
  • 1 cup Bell Peppers diced, any variety
  • 1 cup Monterey Jack Cheese or cheddar/provolone
Dough
  • 2 cups Almond Flour or 1/4 to 1/3 cup coconut flour per cup
  • 8 oz Cream Cheese softened
  • 2 large Eggs no substitutes recommended

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large skillet over medium heat, cook the ground beef until browned (5-7 mins), then add diced onions and bell peppers; sauté until tender (3-4 mins).
  3. In a mixing bowl, combine almond flour, eggs, cream cheese, and seasonings, mixing until a smooth dough forms (2-3 mins).
  4. Dust the countertop with almond flour, roll out the dough into 5-6 inch circles, and place filling in the center before sealing the edges.
  5. Place filled rolls on the baking sheet and bake for 20-25 minutes until golden brown.
  6. Allow the rolls to cool for about 5 minutes before serving.
