- In a large mixing bowl, use an electric mixer to beat 8 ounces of softened cream cheese on medium speed until smooth and fluffy, about 2-3 minutes.
- Add 1/4 cup of powdered sugar and 1 teaspoon of vanilla extract to the cream cheese. Continue mixing on medium speed until fully incorporated and creamy, about 1-2 minutes.
- Gently fold in 8 ounces of thawed whipped topping using a silicone spatula.
- Rinse and dry all your fresh fruits thoroughly. Hull and slice 2 cups of strawberries, peel and slice 2 kiwis, and chop 1 cup of pineapple.
- Gently fold the prepared fruits into the creamy mixture until evenly coated.
- Cover with plastic wrap and refrigerate for at least 1 hour.
- Just before serving, sprinkle 1/2 cup of toasted coconut flakes on top.
