Step-by-Step Instructions
- Pat the beef chuck roast dry with paper towels and rub generously with olive oil, salt, black pepper, garlic powder, and onion powder.
- In a skillet, heat olive oil over medium-high heat and sear the beef roast for about 3-4 minutes on each side.
- Transfer the seared beef to the Crockpot, pouring any remaining juices from the skillet over it.
- Mix beef broth, Worcestershire sauce, and soy sauce in a bowl, then pour over the beef in the Crockpot.
- Cover the Crockpot and set to cook on low for 8 hours.
- After 8 hours, let the beef rest for about 5 minutes and then shred with two forks in the Crockpot.
- Prepare the hoagie rolls by slicing them open and optionally broiling for 1-2 minutes.
- Assemble the sandwiches by filling hoagie rolls with shredded beef and adding provolone cheese if desired.

Notes
Season beef generously for maximum flavor. You can simplify by skipping the searing step. Adjust the broth seasoning before serving.
