  • 1 cup Flour
  • 1 cup Panko Breadcrumbs Regular breadcrumbs can be used if panko is unavailable.
  • 1 tablespoon Everything but the Bagel Seasoning Optional
  • 1 cup Fry Oil Canola, sunflower, or vegetable oil is preferable.
  • 2 large Eggs Substituting is not recommended for perfect coating.
For the Pickled Slaw
  • 2 cups Romaine Lettuce Can substitute with green cabbage.
  • 2 cups Cabbage Either green or purple cabbage can be used.
  • 1 cup Banana Peppers Sliced dill pickles can be used as an alternative.
  • 1/2 cup Banana Pepper Juice Vinegar can be substituted.
  • 1/2 cup Sour Cream Can use Greek yogurt or mayonnaise as alternatives.
For Assembly
  • 1 cup Mozzarella Balls Cheddar or provolone may replace for different flavor.
  • 4 pieces Brioche Bread/Buns Ciabatta or Italian rolls can be used as substitutes.

Method
 

Step-by-Step Instructions
  1. Prepare the Chicken by pounding cutlets to an even thickness of about ¼ inch.
  2. Set Up Dredging Stations with flour, beaten eggs, and panko breadcrumbs.
  3. Dredge the Chicken cutlets first in flour, then eggs, and finally in panko, pressing gently.
  4. Fry the Chicken in heated oil at 350°F for 3-4 minutes per side.
  5. Melt the Cheese by broiling the fried chicken with mozzarella balls on a baking sheet.
  6. Prepare the Pickled Slaw by tossing lettuce, cabbage, banana peppers, juice, sour cream, salt, and pepper together.
