Preparation
- Peel and slice the onion into bite-sized pieces. Sprinkle with kosher salt and allow to sit for 15 minutes.
- Rinse and drain the onions thoroughly, then pat dry with paper towels.
- In a mixing bowl, combine onions with remaining salt, black pepper, cayenne pepper, garlic powder, cornmeal, flour, and baking powder.
- Gradually stir in milk to form a thick batter.
- Let the batter rest for 5 to 10 minutes.
- Heat oil in a deep skillet to 350°F (175°C).
- Carefully drop rounded tablespoons of batter-coated onions into the skillet, frying for about 3 minutes on each side.
- Transfer fried bites to paper towel-lined plate to absorb excess oil.
- Serve warm with the tangy dipping sauce.
