Cooking Steps
  1. In a large skillet, heat 2 tablespoons of olive oil over medium heat. Season shrimp with chili powder and salt, then add to the skillet. Cook for about 3-4 minutes until pink and opaque. Remove shrimp and set aside.
  2. In the same skillet, melt 2 tablespoons of butter over medium heat. Add chopped onion and a pinch of salt, sauté for about 3 minutes until translucent. Stir in minced garlic and cook for another 2 minutes.
  3. Mix in the cooked corn and smoked paprika into the skillet. Stir to combine, allowing the flavors to meld for about 2 minutes.
  4. Pour in half-and-half, stirring to combine. Let it come to a gentle simmer, then add crumbled feta, stirring until melted and creamy.
  5. Squeeze lime juice into the sauce, stir well. Return shrimp to the skillet, gently reheating for 1-2 minutes without boiling. Garnish with lime slices and cilantro.
