  1. In a jar or bowl, blend together 1/2 cup of rolled oats with most of your favorite milk—dairy or plant-based. Mix with a fork for about 30 seconds until well moistened, then set aside.
  2. Introduce 2 tablespoons of pistachio butter into the oat mixture. Stir until fully integrated, achieving a creamy texture, about 1 minute.
  3. Swirl in 2 tablespoons of yogurt (if using) with 1 teaspoon of maple syrup or honey, 1/4 teaspoon of vanilla extract, and a pinch of salt. Stir for another minute until smooth.
  4. Check the texture. If too thick, add more milk; if too runny, sprinkle in a bit more oats.
  5. Seal your jar or cover the bowl and refrigerate for at least 6 hours or overnight.
