- Pit and chop 4 Medjool dates into small pieces. Place them in a blender with 1/4 cup milk. Blend until smooth.
- In two mason jars, divide 1 cup rolled oats and 2 tablespoons chia seeds. Mix well.
- Add 1/2 teaspoon ground cinnamon and 1/8 teaspoon kosher salt to each jar. Stir to combine.
- Pour the blended date mixture and remaining 1.75 cups milk into each jar, and stir to combine. Add honey if desired.
- Seal the jars and shake vigorously for 30-45 seconds to mix all ingredients.
- Refrigerate for at least 4-8 hours, or overnight, to let the oats soak up the liquid.
- In the morning, stir the oats and adjust consistency with milk if necessary. Add toppings before serving.
