Method
 

Cooking Instructions
  1. Cook the linguini noodles in boiling salted water until al dente, usually 8-10 minutes. Reserve 1 cup of pasta water before draining.
  2. In a blender, combine avocados, egg yolks, kale, garlic, olive oil, lemon juice, salt, paprika, and cayenne. Blend until smooth.
  3. With the blender running, gradually add reserved hot pasta water until the sauce reaches a creamy consistency.
  4. Combine drained linguini with the creamy avocado sauce, tossing to coat the noodles thoroughly.
  5. Stir in crumbled bacon and Parmesan cheese until evenly distributed. Adjust seasoning as desired.
  6. Serve immediately while warm, garnished with extra Parmesan and black pepper.
