Cooking Instructions
- Heat 2 tablespoons of olive oil in a large soup pot over medium-high heat. Add 4 minced garlic cloves and sauté for 1-2 minutes until fragrant.
- Stir in 2 tablespoons of tomato paste and 1 tablespoon of Italian seasoning. Cook for about 5 minutes until the tomato paste darkens.
- Gradually add 6 cups of chicken broth and bring to a gentle simmer, seasoning with salt to taste.
- Stir in 1 cup of orzo pasta and cook for approximately 10 minutes until tender.
- Fold in 2 cups of shredded chicken and pour in ½ cup of heavy cream. Stir well until heated through.
- Stir in the juice of 1 lemon, mix until combined, and serve with toppings.
