  • 1 cup Chickpeas Drained and rinsed; can use soaked and cooked dried chickpeas.
  • 1 cup Cherry Tomatoes Halved.
  • 1 medium Cucumber Diced.
  • 1/4 cup Red Onion Finely chopped.
  • 1/4 cup Fresh Parsley Chopped.
For the Dressing
  • 1 medium Lemon Juice Freshly squeezed.
  • 2 tablespoons Olive Oil
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Freshly Ground Black Pepper
  • 1/2 teaspoon Ground Cumin
Optional Ingredients
  • 1 cup Lettuce Leaves For serving as wraps or base.

Method
 

Combine the Salad Ingredients
  1. In a large mixing bowl, gently fold together the cottage cheese, chickpeas, cherry tomatoes, cucumber, red onion, and parsley.
Prepare the Dressing
  1. In a separate bowl, whisk together the lemon juice, olive oil, salt, pepper, and cumin until smooth.
Dress the Salad
  1. Pour the dressing over the salad and toss gently.
Adjust Seasoning
  1. Taste and adjust seasoning with additional salt or pepper if necessary.
Prepare for Serving
  1. If preferred, line a serving platter with lettuce leaves.
Serve and Garnish
  1. Spoon the salad into bowls or onto lettuce leaves and garnish with parsley.
Chill (Optional)
