  • 200 grams Tapioca Pearls Use sago if desired.
  • 1000 ml Water Standard tap water works well.
For the Watermelon Mixture
  • 400 grams Watermelon Sweetness and base flavor; substitute with mango or cantaloupe for a new twist.
  • 400 ml Coconut Milk Canned coconut milk can be thinned with cold water if too thick.
Assembly Essentials
  • 100 grams Watermelon Cubes Cut into 1cm cubes for best texture.
  • 2 tablespoons Tapioca Pearls Make sure they’re cooked properly.

Method
 

Step-by-Step Instructions for Watermelon Coconut Sago
  1. Bring 1000ml of water to a vigorous boil in a medium pot. Once boiling, gently add the tapioca pearls, stirring continuously. Reduce heat to medium-low, cover, and simmer for 15–18 minutes.
  2. After simmering, turn off the heat and let the tapioca sit, covered, for another 10–15 minutes.
  3. Once translucent, drain the tapioca pearls and soak them in ice water for about 3 minutes.
  4. Slice 100g of fresh watermelon into 1cm cubes. Blend the remaining 300g with 400ml of coconut milk until smooth.
  5. Layer each cup with 50g of watermelon cubes and 2 tablespoons of cooked tapioca pearls. Pour the watermelon-coconut smoothie gently along the sides.
  6. Chill the assembled dessert in the refrigerator for about 15–30 minutes before serving.
