Step-by-Step Instructions for Watermelon Coconut Sago
- Bring 1000ml of water to a vigorous boil in a medium pot. Once boiling, gently add the tapioca pearls, stirring continuously. Reduce heat to medium-low, cover, and simmer for 15–18 minutes.
- After simmering, turn off the heat and let the tapioca sit, covered, for another 10–15 minutes.
- Once translucent, drain the tapioca pearls and soak them in ice water for about 3 minutes.
- Slice 100g of fresh watermelon into 1cm cubes. Blend the remaining 300g with 400ml of coconut milk until smooth.
- Layer each cup with 50g of watermelon cubes and 2 tablespoons of cooked tapioca pearls. Pour the watermelon-coconut smoothie gently along the sides.
- Chill the assembled dessert in the refrigerator for about 15–30 minutes before serving.
