Meatballs Preparation
- Preheat your oven to 400°F (200°C).
- In a large mixing bowl, combine the ground chicken, panko breadcrumbs, finely diced celery, minced chives, egg, kosher salt, and black pepper. Mix gently until just combined.
- Form equal-sized meatballs using a cookie scoop or your hands and place them onto a lined baking sheet.
- In a small bowl, melt the salted butter and mix with buffalo sauce. Lightly coat each meatball with the sauce.
- Bake the meatballs in the preheated oven for 20 minutes, then increase the temperature to 450°F (232°C) and bake for an additional 10 minutes until golden brown.
- While the meatballs bake, prepare a cucumber salad by combining thinly sliced cucumbers and yellow celery leaves with ranch dressing. Toss gently and season with salt and pepper to taste.
- Serve the meatballs warm alongside the cucumber salad with extra ranch dressing for dipping.
