Ingredients
  

For the Meatballs
  • 1 lb Ground Chicken or ground turkey for a lighter option
  • 1 cup Panko or regular breadcrumbs
  • 1 cup Celery (finely diced) can substitute with finely chopped bell peppers
  • 1/4 cup Chives (minced) or green onions
  • 1 large Egg
  • 1 tsp Kosher Salt adjust to taste
  • 1/2 tsp Black Pepper adjust to taste
  • 1/4 cup Ranch Dressing or blue cheese dressing for tanginess
  • 2 tbsp Salted Butter for coating
  • 1/2 cup Buffalo Sauce use milder sauce for less heat
  • 2 tbsp Mayonnaise or Greek yogurt
  • 1/4 cup Sour Cream or Greek yogurt
  • 1 tbsp Fresh Dill use dried dill if fresh isn't available
  • 1 tbsp Distilled White Vinegar
  • 1 tsp Worcestershire Sauce
  • 2 cloves Garlic (finely grated) or garlic powder
For the Salad
  • 2 cups English Cucumbers (thinly sliced) or regular cucumbers
  • 1/4 cup Yellow Celery Leaves or flat-leaf parsley
  • 1/4 cup Additional Ranch Dressing for serving

Method
 

Meatballs Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, combine the ground chicken, panko breadcrumbs, finely diced celery, minced chives, egg, kosher salt, and black pepper. Mix gently until just combined.
  3. Form equal-sized meatballs using a cookie scoop or your hands and place them onto a lined baking sheet.
  4. In a small bowl, melt the salted butter and mix with buffalo sauce. Lightly coat each meatball with the sauce.
  5. Bake the meatballs in the preheated oven for 20 minutes, then increase the temperature to 450°F (232°C) and bake for an additional 10 minutes until golden brown.
  6. While the meatballs bake, prepare a cucumber salad by combining thinly sliced cucumbers and yellow celery leaves with ranch dressing. Toss gently and season with salt and pepper to taste.
  7. Serve the meatballs warm alongside the cucumber salad with extra ranch dressing for dipping.
